I did find it on ibiblio (where the Fiddler's Companion is located) as a reference to a recorded version, but not in the Fiddler's Companion itself.

Finally did a Google search - it appears that Nat King Cole did this...

  Red Sails In the Sunset Lyrics

  -Artist: Nat King Cole

  {Red sails in the sunset, way out on the sea}
  Oh, carry my loved one home safely to me
  {She sailed at the dawning, all day I've been blue}
  Red sails in the sunset, I'm trusting in you

  Swift wings you must borrow
  Make straight for the shore
  We marry tomorrow
  And she goes sailing no more

  {Red sails in the sunset, way out on the sea}
  Oh, carry my loved one home safely to me

  (instrumental interlude)

  Swift wings you must borrow
  Make straight for the shore
  We marry tomorrow
  And she goes sailing no more

  {Red sails in the sunset}
  Way out on the sea (ooh-wee-ooh, wee-ooh)
  Oh, carry my loved one
  {Home safely to me}

  {bracketed words are sung by Nat in unison with background singers}
  (words in parentheses are sung by background singers only)

And I found a really bad scan of what appears to be hand-written score for concertina (redsailsinthesunset.gif) on http://www.concertinamusic.com with the following lyrics;

  Red Sails In The Sunset

  (Chorus)
  Red sails in the sunset
  Way out on the sea
  Oh, carry my loved one
  Home safely to me.

  He sailed at the dawning
  All day I've been blue
  Red sails in the sunset
  I'm trusting in you.

  (Chorus)

  Swift wings you must borrow
  make straight for the shore
  We marry tomorrow
  and he goes sailing no more.
